I love siraegi 시래기 (dried radish greens) not just because it sounds like “trash” which makes me laugh, but because it employs a classic Korean vegetable preservation technique, one that ensure that we use all parts of the vegetables with little waste, but also ensures we have delicious and nutritious vegetables throughout the winter. It’s so cool how many applications the humble mu (Korean radish) has, and how drying its leaves transforms these leaves into a whole new texture and flavor profile!
